Ever wondered how chefs and bakers get their pastries and pies to be so flaky and crispy? You may know the answer is lard; however not just any type of lard will give pastries that characteristic crispiness. ‘Flair fat’ or ‘leaf fat’ lard is a finer lard that comes from the fat around the pig’s kidneys. It is whiter in colour and is associated with very low pork flavour.

Use it abundantly to create the flakiest, crispiest, highest grade pastries.
