A cut easily recognised, Gammon is the name given to the meat from the hind legs of a pig. The preparation of the meat involves much the same curing process as bacon. It is essentially ‘raw’ ham; whereas¬†ham is sold cooked or dry-cured and ready for eating, gammon needs to be cooked in order to be consumed and sold as gammon ham.
